Starting the year as we mean to go on

As I said in my Goals for 2020 post, one of my top goals is to get more organised and set a weekly Meal Plan. This is not only to save money but to take away the daily ritual of standing in front of the fridge wondering what to make.

Meal Plan Monday - Getting organised by setting a seven day weekly meal plan and shopping for the exact ingredients not only feels more organised but saves money as well

I’m not going to stick to this rigidly on a day to day basis. I’m going to plan seven meals and then pick and choose on a daily basis and see how we get on.

So here goes…………

Monday

Cheesy Chicken and Vegetable Pasta with Garlic Bread. We had a roast chicken yesterday and there’s quite a lot of chicken leftover to I thought I would make this. Isabelle was a bit worried about going back to school and wearing her glasses for the first time so I thought it would cheer her up if she’s had a bad day.

Tuesday

Fish and Chips – Homemade using breaded fish and making our own chips. I make them pretty much the same way you would make potato wedges by cutting potatoes into chip sized pieces, par-boiling them before putting them on a baking tray, drizzle with oil, a little bit of salt and a sprinkle of smoked paprika. I had salad and tartar sauce whereas Isabelle prefers beans or peas.

Wednesday

Ham and Lentils – We had quite a lot of Christmas ham leftover which I cut into two pieces and froze. Chris usually makes this, but essentially it’s like a Ham, Carrot and Lentil Stew that we have with crusty bread similar to this Ham Hock and Lentils recipe that I found on the Good Food App. I did this in the slow cooker and it’s so nice to come home to after a cold and wet school pick-up.

Thursday

Sausage Pasta – I made a tomato based pasta sauce and added in some chopped cooked sausages at the end and served with filled pasta. Once I’d served the kids portions I added in some chilli flakes to give it a bit of a kick.

Friday

We were supposed to have Taco’s but the day completely ran away with us as we waited for news on Ryan’s Army Assessment so ended up having Fish and Chips from the local chippy with curry sauce, Yum.

Saturday

Jacket Potatoes with a choice of beans and cheese or cheese and coleslaw with salad. This is always a winner with my kids so I microwave them for about five minutes before putting them in an oven dish with a splash of oil and a sprinkle of salt.

And there we have it……

Our first Meal Plan of the Year. It feels good knowing that we have everything in the fridge and cupboards to make these meals, one less thing I have to do.
